Penny University is serving more than great food and coffee with safety the signature dish on the menu.
“I love Canberra because it has a great sense of community, it’s safe, family oriented and it’s home,” said Ellie Raymond, who has been operating the popular Kingston restaurant and café since 2013.
“COVID-19 took us by surprise after the bushfires and hail damage as our ceiling fell to the ground and we had to shut down like a lot of businesses in Kingston.
“All that kind of prepared me mentally for the pandemic.”
Ellie sat down with her staff and worked through all the new restrictions and switched Penny University to takeaway - through the bi-fold windows at the front of the shop.
“Our regular customers really kept us going during this time and I can’t thank them enough,” said Ellie.
“Now a typical day for us is ensuring everything is right from set-up, all our tables are spaced, everything is clean, we have our sign-in sheets at the door and we are following all the guidelines to make sure we are keeping everyone safe.
“What has been useful for us has definitely been the ACT Health Protective Services at the shop and going through with them what we should and shouldn’t be doing.
“We just want to ensure that we are doing the right thing and keeping everyone safe.”
